Sunday Eats: Peach Vanilla Marinated Tilapia

So, this week is like a weekday dish I’m sharing on a Sunday. Such busy schedules make it hard to eat healthy, so sometimes you got to go to Costco and get the fresh tilapia and freeze it for the week’s meals. I call this my weekday quickie!

Ingredients:
Fresh tilapia
Peach vanilla dressing
Pepper blend seasoning
Mrs. Dash Salt-Free Table Blend Seasoning
Progresso bread crumbs
Sweet potatoes
Hanover Complements South of the Border frozen vegetables

Pre-work
This week, I marinated 4 bags of 4 pieces of tilapia and on Friday, I took out the peach vanilla dressing marinated one.

Directions:
I added seasoning, bread crumbs, drizzled with olive oil and more vanilla peach dressing.

I put the sweet potato in the oven and got it cooking early. No butter, just olive oil.

Then, I went through my freezer looking for my vegetable and decided on a rice and okra package I picked up. Man, it was so good. It had raisins, okra, and corn!

While the potato was cooking, I washed a load and prepared my tilapia. Needless to say, it was a quickie meal, but man was it good, satisfying, and healthy!
