This morning, I went refrigerator shopping. You know, when you’re hungry but don’t feel like going shopping so you open the refrigerator door hoping to see a full cooked meal ready and waiting. LOL. Well, there was no full cooked meal in mine ;( But there was a watermelon ; )
Put aside all the racist jokes about the fruit and let’s face it: watermelon is sweet, refreshing, and provides hydration for your body (that’s why the word “water” is in the name; there’s a lot of fluid in them).
Besides that, it’s low in saturated fat, cholesterol, and sodium, yet also a good source of potassium, vitamin A, and vitamin C.
My friend Stephanie made a watermelon salad for a cookout this summer, so I played copy cat and made one too!
Ingredients:
Fresh watermelon
Fresh squeezed lemon juice
Fresh mint leaves
Directions:
I scooped mine out and mixed it with lemon juice and fresh mint leaves. Then, placed it in the refrigerator so the flavors could mix!
Yup, that’s all there is to it! LOL.
