I’m hungry and in the kitchen. It’s like 11AM on a Wednesday. I have some meetings to go to and I know I’m gonna be hungry when I get home.
With most people’s morning coffee, there’s always either a donut or a bagel, or a muffin. This store I used to get breakfast from in Boston called The Kingston Deli used to grill the muffins. So good, I had to share.
Rice, rice, and more rice! White rice, brown rice? Pilaf rice, yellow rice, Rice-A-Roni, rice milk. Rice pudding, Rice Crispy treats, and well, they even throw rice at weddings because it is often directly associated with prosperity and fertility.
This morning, I went refrigerator shopping. You know, when you’re hungry but don’t feel like going shopping so you open the refrigerator door hoping to see a full cooked meal ready and waiting. LOL. Well, there was no full cooked meal in mine ;( But there was a watermelon ; )
Hey, people. So, it’s Sunday Eats season again and I’m back with some recipes I hope you’ll enjoy in the heat of summer.
So, this week is like a weekday dish I’m sharing on a Sunday. Such busy schedules make it hard to eat healthy, so sometimes you got to go to Costco and get the fresh tilapia and freeze it for the week’s meals. I call this my weekday quickie!
Now, it’s not often that I eat eggplant, let alone grab one at the store, but with a better diet should come more and more vegetables. Eggplant is definitely one I seem to ignore on purpose. If memory serves me well, I had some a while back. It was fried, slimy, and gross. I now know that it wasn’t cooked properly. It looks daunting, dark, and quite frankly, I never know what to do with the thing! So, here goes nothing.
